Roll the dough into a large circle approximately ½ inch thick. You mix flour with butter, sugar, milk, eggs, yeast and a few other minor ingredients into a nice dough.

Form a soft dough, cut and fry. Attach dough hook to standing mixer while yeast is activating. Stir in 1 cup flour mixture.
Set up a cooling rack over a baking sheet. Turn over and cook the second side; Place the cut donuts and holes on a lightly greased baking sheet.

Stir into the milk and flour mixture, then mix in the butter and eggs. I also found using my bread machine on the dough cycle produced a more delicate donut. This recipe makes approximately 24 doughnuts that are 3 1/2 inches in diameter.
Leave it in a warm area to rise and double in volume, then roll it out into a sheet with a thickness of 3/4″ (2 cm) and using a glass, cut circles out. The butter and the fat in the eggs help make your donut soft and rich. Cover and let rise for 1½ to 2 hours or until the dough has doubled in size.
When dough is firm enough, turn it out onto a floured surface, and knead for 3 to 4 minutes. Let stand in a warm place until bubbling and doubled in volume, about 1 hour. Stir to combine and then let sit for about 5 minutes to let the yeast begin to come alive.
Remove the dough from the bowl, spray the bowl with non stick spray and place the dough in the bowl. The donut, then the glaze. Roll the dough up like a cinnamon bun, then use a long knife to rough chop the whole roll into a grid pattern with squares about an inch wide.
Each side should take no more than a minute. After 5 minutes, pour the yeast mixture into the large bowl of a stand mixer and add the milk and shortening. Here’s how to make each.
The dough leavens, develops flavour and becomes somewhat softer in. Add the warm milk, vanilla, and egg yolks. A fry thermometer or candy thermometer is very helpful here.
Repeat with the remaining dough. The sugar sweetens the dough and helps it brown during frying (thanks to the mailard reaction). This yeast donut recipe makes 2 dozen donuts, plus their accompanying doughnut holes.
Pour the milk into the bowl of a standing mixer, and sprinkle in the sugar and yeast. This dough is used to make cinnamon rolls, yeast donuts, soft dinner rolls, braided loafs, belgian liege waffles, and so much more. Heat the oil or shortening in a heavy frying pan or skillet to 350°f.
