Don’t be afraid to over season the meat. Marinate 2 hours, turning occasionally.

I recommend using only traeger brand pellets.
Traeger smoker recipes tri tip. After the 50 mins, i remove the tri tip from the traeger and wrap in foil. Prior to the 1950s, tri tip was often ground into hamburger or sold as stew beef, but since it’s lean and tasty tri tip is becoming more and more popular. It takes about about an hour and half to get there, so it isn’t an all day event, like if you smoke a brisket.
Turn the temperature to 225. You want to cook the meet to 130 degrees for medium rare. This should cook around 80 minutes.
If frozen, place the turkey in a plastic bag and let it thaw in the refrigerator (takes 24 hours of thawing for every 5 lbs of turkey.that means 3 days for a 15 lb turkey). I pull mine off around 135. Rub surface of tri tip with the oil, and then generously apply the rub to both sides of the meat.
When your tri tip is near the correct internal temperature, preheat a cast iron skillet over high heat. Select a fresh or thawed turkey ( 15 lbs). Let it rest for a bit and dig in.
Shake the rub all over the tri tip and rub it in, covering every part of the meat. Remove your tri tip from the smoker. Use a foil sheet pan or line a sheet pan with foil for easier cleanup.
Drop in the sprig of rosemary and then place the tri tip into the sizzling butter. While your tri tip sits with the rub, fire up the traeger and set it to 200f. Slice across the grain and serve.
Then sear to your desired doneness. They have a moisture content of 10%. I'm a big fan of the reverse sear.
Once tri tip hits doneness, wrap in butcher paper and allow to rest for at least 10 minutes. Loosely tent with aluminum foil. How long to smoke tri tip.
I like to hold the smoker. Plan ahead, this recipe marinates overnight. Turn your trager to smoke ( allow about 5 minutes) take your tri tip out of the marinade and lightly dust all sides of the tri tip with your favorite rub.
Get it to 130 and then a quick 2 minute sear on high heat. This seems to be enough time to get a smokey flavor into the tri tip. I usually have mine on the smoker for about 90 minutes.
Place on the grill and let it smoke for 90 minutes. Tri tip, also know as triangle steak, comes from the triangular bottom tip of the sirloin, a cut that weighs about 1.5 to 2.5 pounds. Let the meat come to room temperature while you preheat your grill following factory instructions to 175°.

Cook until internal temperature reaches 135 degrees f. Place back on grill for 10 minutes each side. Once the traeger is at temp, i put the tri tip in for 50 mins.
Place the steaks on the grill and smoke for 1 hour. Preheat smoker to 225 degrees. Trim the steak of any silverskin/membrane on the surface using a filet knife.
Prepare charcoal grill for direct searing at 600 degrees. Set tri tip out for 30 min before grilling. You simply plug in the grill, fill the pellet hopper, turn on the grill to the right temperature to preheat with the top closed, place the meat on the rack, then go open a beer and relax while the traeger goes to work.
When ready to cook, start the traeger grill on smoke with the lid open until the fire is established (4 to 5 minutes). Until it reaches a interal temp of about 120 degrees. Be sure to get a nice crust on both sides of the beef.
Place the drip pan on the rack below the roast. Heat a smoker to run at 250f. Let the meat rest at room temperature as the smoker heats up.
There are many ways to do this, and do it well, this is just the one that we like the best. Place the water in the bowl at the bottom of the smoker. It will be nice and tender post smoke.
Using indirect heat, smoke cook the roast for about 2 hours or until it reaches medium rare (140°f) remove from smoker and allow trip tip to rest under foil for about 20 minutes once it has finished cooking. Visit the truth about food website for more information. All opinions are my own.
